I've noticed that the number of spam filters has dropped and there are only 2or 3 of them left. What's the reason for this?

Also, the remaining do a poor job. They let in messages that have very explicit words in the subject. How can I control that?

Hello :)

If there is any very explicit words in the subject line, mail filter option on cpanel will help you to overcome the issue.

You can get the tutorial to set up mail filter from he following

We are now using ASSP on our new cPanel servers which will greatly reduce the amount of spam and is very efficient.
